Can the admin view and edit the products listed under a model profile?

Yes, the admin sure can do that. Just go to Models in the admin panel to find all the models on your platform. Then click on Action > Products to see the products listed under a model.
Once you see the product in question, use the Update option to change its attributes.
You can make the product active/inactive, change stock availability figure, title, description, photos, the whole works from here.
The same can also be done directly from the Products page, where all products listed on store can be found. Just follow the same steps as above.
